Meet Keith Mitchell, head chef of Healthy Heart Meals
Keith Mitchell is the creator and chef par excellence of Healthy Heart meals. He has spent 27 years working in kitchens, 20 of those years as a chef. Keith’s vast experience in meal preparation includes chef duties at the Chateau Lake Louise in Banff Springs, at the Chelsea Inn in Toronto, as well as at a number of other restaurants and hotels across Canada.
For the past five years, Keith had been the head chef for In The Zone Delivery. Keith is an extremely versatile and talented chef who has always been fascinated by the pharmacological properties of food. This interest led Keith to the development of Healthy Heart meals, and to his involvement in Le Café Vert, menu items from which will be added to his Healthly Heart menus in the near future.
‘Healthy Heart’ has become as much of a lifestyle choice for Keith as it is for his clients.
Keith found himself in a situation whereby he was 60 pounds above his ideal weight and he needed to start eating healthy food. Keith knew from experience that the only way that he could lose weight and keep it off was to develop a healthy eating plan which incorporated food that he actually wanted to eat. Keith developed the Healthy Heart menu using the parameters of Canada’s Food Guide to Healthy Eating as well as those of the Heart And Stroke Foundation of Canada. The last piece of the puzzle was to focus on portion control.
As Keith started to see positive results he became further motivated and has since joined a gym as well as taken up inline skating and Yoga. According to Keith, “This positive energy and good sense of fun will be reflected in the meals I provide for clients on a regular basis. In actual fact, I have succeeded in creating the perfect job for myself. Healthy Heart’provides the ideal venue to test new and exciting ingredients and flavours.”
Keith explains why he became involved in ‘Healthy Heart’ and why it will play a significant part in his role as head chef, “The way we have structured the company allows it to evolve and grow while I can still remain hands on and engaged in a way that I was unable to be in the past.”
